Peach Oatmeal Cookies

It is summer in Georgia, so that means peaches. I have been craving some cookies or sweets to go with my tea. Obviously I had to incorporate the fruit of the state.

This is my last free summer, so I should probably be posting more, but I have been enjoying being lazy. I have been whipping up things, but then I am too lazy to write down the recipes and post them. For this I am sorry. I will get better.

Anyway, back to business. These cookies are very soft and the taste of honey with the peaches is amazing. They do take a bit longer to bake because of the amount of liquid in the batter along with a juicy peach.

Peach Oatmeal Cookies


Ingredients
1 cup of rolled oats, chopped in a food processor (or 1 cup quick oats)
3/4 cup whole wheat flour
1 1/2 tsp cinnamon
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp light butter substitute, or butter if you so desire (melted)
1 egg
1/2 cup honey
1 peach, finely diced

Directions
  1. In a large mixing bowl, whisk together the oats, flour, cinnamon, baking powder, and salt.
  2. In another bowl, whisk the butter with the egg.
  3. Add in the honey to the butter and egg mixture.
  4. Add the wet ingredients into the dry ingredients.
  5. Fold in the peach pieces.
  6. Refrigerate for 1-2 hours minimum.
  7. Preheat the oven to 350, and prepare a large cookie sheet.
  8. Bake for 15-18 minutes.
  9. Allow to cool and then move from the sheet.
