Mixed Berry Banana Bread

I am the worst when it comes to updating my recipes. I have been sitting on this one for a month. That's a long time. I keep seeing the pictures of the recipe in my phone and I tell myself I'll upload them tomorrow. Well today is now tomorrow.

This recipe is my greek yogurt banana bread with berries. Well strawberries aren't actually a berry, but bananas are berries. So I guess this could also be called mixed berry strawberry bread. But that just sounds weird, and lets not get too deep into the weeds about technicalities.

Any ways, away from berry talk. This recipe is great, it actually ended up making two loaves. So it was more bang for the buck.

Mixed Berry Banana Bread


Ingredients
2 browned bananas, mashed
2 eggs, beaten
1/2 cup plain greek yogurt
1/4 cup brown sugar
1/2 tsp vanilla extract
1 1/2 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup blueberries
1/2 cup sliced strawberries

Directions
  1. Preheat oven to 350, and grease a 9x5 loaf pan.
  2. In a large bowl, mix the bananas, eggs, yogurt, sugar, and vanilla.
  3. In a separate bowl, mix the remaining ingredients.
  4. Add half the dry ingredients into the wet ingredients and mix, then add the second half until fully incorporated.
  5. Add in the blueberries and strawberries and mix until evenly distributed.
  6. Pour the batter in the pan, and bake for 35-40 minutes or until a toothpick upon insertion comes out clean.
