Turkey Taco Skillet

I am the worst at posting recently. It has been over two months! I remember the good old days when I would post about every week or so. I keep meaning to post and share new recipes but life is getting hectic.

This recipe is out of necessity. During the week I have little time to spend in the kitchen. Instead I use all my free time to stuff knowledge into my brain. Medical school gets harder, which is surprising. Now I started really meal prepping. I make some type of protein esque dish, and then throw it over some lettuce or grains (barley is my fave currently) throughout the week.

This dish is wonderful over anything. I ended up adding hot sauce and salsa because if my nose isnt watering, there is not enough spice.

Turkey Taco Skillet


Ingredients
1 lb 97% lean turkey
1 15 oz. can of diced tomatoes with jalapenos 
1 15 oz. can of no salt added black beans, rinsed and drained
1 large corn, cooked and the kernels cut off
1 large white onion, diced
2 cloves of garlic diced
2 tsp chili powder

Directions
  1. Over medium heat, cook the turkey with the chili powder until browned and remove into a plate
  2. Next cook the onion and garlic until the onion is soft and translucent.
  3. Add back in the turkey along with the rest of the ingredients and cook until everything is nice and warm
