Roasted Salmon and Brussel Sprouts

Sometimes you want a delicious meal without all of the dishes. That's why this meal is a one pan meal, which is fantastic and calls for less clean up. Well I dish use a bowl to toss the sprouts with the salt and pepper, so maybe not 100% one pan meal.

I came up with this because the store was having a sale on salmon and brussel sprouts. It's fantastic when a meal is not only delicious, but also relatively cheaper. This was a great choice for a nice at home dinner. I paired it with some pre-dinner bread and cheese as well as a nice red wine.

Avoid the large pile of dishes, and enjoy a nice meal.

Roasted Salmon and Brussel Sprouts


Ingredients
1 lb salmon
3-4 cups brussel sprouts, cut in half
salt and pepper
Olive oil spray
4 slices lemon

Directions
  1. Preheat oven to 450 F.
  2. In a large bowl, spray the brussel sprouts and sprinkle with ground black pepper and salt.
  3. Toss sprouts and spread onto a prepared pan.
  4. Bake the sprouts for 15 minutes.
  5. Sprinkle pepper onto the salmon and place lemon slices on top of the fish.
  6. Remove the pan, and spread around the sprouts and make room for the fish.
  7. Bake for another 15 minutes.
  8. Remove and allow to sit for two minutes.
