This recipe was birthed by what I had in my kitchen and what was on sale at the grocery. A life on student loans doesn't really conjure up fine dining with expensive ingredients. However, this dish makes up for its low cost with deliciousness. Also it is crazy easy to make, the hardest part was chopping the onions and trying not to cry.
So what are you waiting for? Fire up the oven and pull out your sharpest knife, you have some food to make.
One-Pan Turkey Loaf and Sweet Potatoes
Ingredients
1lb 99% fat-free turkey breast, or honestly whatever meat your heart so desires
1/2 red onion, peeled and diced
2 sweet potatoes, chopped
2 tp black pepper
2 tsp garlic powder
1 tbsp low sodium worcestershire sauce
oil spray
Directions
- Pre-heat the oven to 375 and prepare a large cooking sheet.
- In a large bowl, spray the potatoes and toss to coat them.
- In another bowl, mix the spices, turkey, and sauce.
- Add in the onions to the turkey and mix until all incorporated.
- On the large sheet, evenly spread out the potato chunks, leaving space in the middle.
- Form two equally sized meatloaves, and place them in the center of the pan.
- Bake for 30 minutes.
- Enjoy
