Maple Vanilla Pudding (Dairy-Free)

In a recent turn of events, I have had to cut back on my dairy consumption. As a child, I was diagnosed with a slight lactose intolerance and it seems to have been acting up these past couple of years. I finally bit the bullet, and have been limiting my dairy intake. However, I love greek yogurt and I didn't want to give it up. I needed to find something to substitute, that is where tofu steps in. Yes tofu.

I did not want to believe that tofu could come close to replacing my beloved greek yogurt. However by the power of the food processor, I was able to fully appreciate how versatile tofu truly is. I have had it in many dishes, mainly as a protein replacement. But it does make a food dessert as I have now learned. 

Maple Vanilla Pudding (Dairy-Free)


Ingredients
1 12.3 oz package of silken tofu
2 packets of stevia, or sweetener of choice
1/4 tsp cinnamon
1 tbsp sugar free maple syrup


Directions
  1. Drain tofu
  2. Add everything into a food processor
  3. Blend until smooth
  4. Eat
