Buffalo Turkey Chili

It is starting to get chilly so what better way to ring in the winter than with some warm delicious chilly. What could possibly make turkey chili even better? Hot sauce.

As a firm believer in hot sauce, I add it to almost everything. My favorite is Frank's Red Hot. So what better way to make food even more delicious than to add quite a bit of my favorite hot sauce. Honest to goodness, this was quite possibly the best idea I had in the week.

Another upside to this recipe is that it takes under an hour to make. Usually I use my slow cooker or a low simmer to make chili, but being in medical school, I don't have as much time to prepare dishes that take a long time. With the power of the microwave, I was able to bypass some of the lengthened cooking time.

Buffalo Turkey Chili


Ingredients
1 lb 93% fat free ground turket
1red onion, diced
1 1/2 cups chopped carrots
3 cloves garlic, minced
1 cup low sodium chicken broth
15 oz. can of diced tomatoes
15 oz. can cannellini beans, rinsed and drained
1 tsp cumin
1 tsp paprika
1/2 cup hot sauce, I use Frank's Red Hot

Directions
  1. In a large pot, spray the bottom and brown the turkey over medium to medium-high heat.
  2. In a large bowl, add the onion, carrots, and garlic, and microwave on high for 4-5 minutes.
  3. Once the turkey is browned, add in the vegetables and beans.
  4. Stir in the broth, tomatoes, hot sauce, and spices.
  5. Bring pot to a simmer and simmer for 40-50 minutes, or until thickened.
