Back to the food. This dish was me purely experimenting in the kitchen. I knew I wanted to mix lemon and ginger with something, and I decided that something should be broccoli and chicken. I am also a lover of onion, so I threw some of that in the pan and beauty happened. Yes, this is a beautiful dish. It is so full of flavor and it is a pretty refreshing meal.
You'll definitely need a large pan for this one, but you'll only need one so thats nice.
Lemon Ginger Chicken and Broccoli
Ingredients
1 lb. boneless skinless chicken breasts, diced into bite size pieces
5-6 cups broccoli florets
1 red onion, thinly sliced
1 lemon, cut in half length wise and then sliced horizontally into thin slices
3 cloves garlic, minced
1/4-1/3 cup low sodium chicken broth or water
Directions
- Spray a large pan, with high sides, and place over medium-high heat.
- Cook the chicken until done, remove the chicken from heat and replace the pan.
- Add in the remaining ingredients except for the broth/water, and stir until all is mixed well.
- Add in the broth, stir, and cover and allow to cook over medium for 10-15 minutes or until broccoli is tender.
- Remove the lid, add in the chicken, and continue cooking for an additional 5 minutes.
- Remove the food. Plate the food. Eat the food.
