Slow-Cooker Sweet and Sour Chicken

My slow cooker is slowly becoming my ally as I take on medical school. Whenever I want a nice hot meal, and a lot of it, but I have so many things to do, I know I can turn to my trusty slow cooker. It is so easy, you just throw things into it, turn it on and walk away. Well except this time, there's one small step in between the turning on and walking away.

This recipe filled my craving for take out and made me not feel guilty either. It is quite simple and delicious and it makes multiple servings which is perfect for meal prepping for the week.

Slow-Cooker Sweet and Sour Chicken


Ingredients
1 lb, boneless skinless chicken breasts, diced
2 tbsp apple cider vinegar
1 tbsp low-sodium soy sauce
1/4 cup low sugar ketchup
1/2 tsp garlic powder
1 tbsp white sugar
1 cup baby carrots diced
1 bell pepper sliced
2 cups snow peas
5 oz. water chestnuts, drained

Directions
  1. Mix the vinegar, soy sauce, ketchup, garlic powder, and sugar together.
  2. Place the chicken in the slow cooker, and cover with the mixture above.
  3. Cover and cook on high 2 hours or low 6 hours.
  4. Remove lid, add veggies and stir, and cook on high for another hour.
  5. When done, eat and enjoy.
