Greek Yogurt Banana Bread

I may have a greek yogurt problem. I buy it in bulk, and I go through a lot during the week. I have it multiple times a day and it has been featured in quite a few recipes of mine. I would say sorry, but Im not. It is just so darn good.

This recipe came about because my roommate had some old bananas and was about to throw them out. I had to stop her, and use those bananas and save them from their untimely doom. Banana bread was in order.

This bread isn't the sweetest, so if you like it really sweet, I would suggest adding more sugar or another form of dry sweetener. It still tastes good though!

Without further ado, I give you greek yogurt banana bread.

Greek Yogurt Banana Bread


Ingredients
3 browned bananas, mashed
2 eggs, beaten
1/2 cup plain greek yogurt
1/4 cup brown sugar
1/2 tsp vanilla extract
1 1/2 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon

Directions
  1. Preheat oven to 350, and grease a 9x5 loaf pan.
  2. In a large bowl, mix the bananas, eggs, yogurt, sugar, and vanilla.
  3. In a separate bowl, mix the remaining ingredients.
  4. Add half the dry ingredients into the wet ingredients and mix, then add the second half until fully incorporated.
  5. Pour the batter in the pan, and bake for 35-40 minutes or until a toothpick upon insertion comes out clean.
