Greek Yogurt Pumpkin Bread

It's October and I haven't been posting pumpkin related goodies. I haven't been posting that much really. It's getting a bit hectic and I've been relying on quick easy meals and have not been experimenting that much.

Today though I went on a wonderful morning run by the river and when I came back, I wanted to make something to celebrate that amazing fall weather. I did not plan to make something special this week so I had to rely on what I had on hand. I ended up modifying my greek yogurt banana bread recipe for pumpkin instead. It turned out pretty well.

Also it's only 100 calories a slice.

Greek Yogurt Pumpkin Bread



Ingredients
I cup pumpkin puree
2 eggs, beaten
1/2 cup plain greek yogurt
1/3 cup brown sugar
1/2 tsp vanilla extract
1 1/2 cups all purpose flour
1 1/2 tsp baking soda
1 tsp nutmeg
1 tsp ground cinnamon

Directions
  1. Preheat oven to 350, and grease a 9x5 loaf pan.
  2. In a large bowl, mix the pumpkin, eggs, yogurt, sugar, and vanilla.
  3. In a separate bowl, mix the remaining ingredients.
  4. Add half the dry ingredients into the wet ingredients and mix, then add the second half until fully incorporated.
  5. Pour the batter in the pan, and bake for 35-40 minutes or until a toothpick upon insertion comes out clean.
