Is there anything greek yogurt can't do? I've used it in almost every meal I have ever made. I sub it for sour cream, butter, oil, as well as eating it on it's own. I guess it was time to sub it for mayo. It is honestly one of my favorite ingredients and I am all aboard the greek yogurt train.
This recipe is super easy to make since all you have to do is whisk and mix. I also like to let it set for awhile to allow the cole slaw mix to absorb the sauce. Also depending on your preference you can either add or remove sweetener or use real sugar in place of my stevia.
All in all, this is a great recipe to bring to cookouts, picnics, and get togethers this summer. Who doesn't love a good slaw on the side?
Greek Yogurt Cole Slaw
Ingredients
16 oz. cole slaw salad mix
1/2 cup plain nonfat greek yogurt
3 1/2 tbsp apple cider vinegar
1/2 tbsp Stevia extract OR 2 1/2 tbsp sugar
1/4 tsp ground black pepper
1/2 tsp salt
Directions
- In a small bowl, whisk together the yogurt, vinegar, sweetener, and pepper.
- In a large bowl, add the cole slaw mix and pour the above mixture over the slaw.
- Mix well.
- Allow to sit about 30 minutes before eating.
