Lentil Burgers

It's been awhile since last time I posted a new recipe. Life has been hectic and I have yet to spend an entire weekend in one place. I normally use saturday to experiment with food, and with me being on the move every weekend, that has not been possible, until this weekend.

I am a huge fan of lentils. I am also a huge fan of sandwiches. So I decided to put these two things together. The way I came up with this was to start with the basics of making any type of non-meat burger and then just start throwing in my favorite flavorings. It turned out pretty well. I'm going to place one burger into half a pita topped with a bit of swiss and broil the sandwich in my toaster oven and have myself a pretty yummy vegetarian melt.

Did you know that dry lentils are crazy cheap? Because they are and it is great. This whole recipe is pretty easy on the wallet. Well I do have a nice stockpile of spices and such so if you don't have such an artillery, than it may cost a teensy bit more or you can even just go super simple with just salt and black pepper.

Lentil Burgers


Ingredients
1 1/2 cups dry green lentils
1 white onion, diced
1 large carrot, finely grated
1 egg
1 cup rolled oats, finely ground
1/2 tbsp ground black pepper
1/2 tbsp cumin
2 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Directions
  1. In a large pot, bring 4-5 cups of water to a boil.
  2. Add in the lentils, bring to a simmer for 30-35 minutes with a partially closed lid.
  3. Preheat oven to 375 and prepare a large cooking sheet.
  4. Drain the lentils and add to a large mixing bowl.
  5. Add in the rest of the ingredients and mix well.
  6. Form 1/3 cup patties and place on the prepared sheet.
  7. Bake for 15-18 minutes.
  8. Remove from the oven and allow to cool.
