Pumpkin Protein Waffles

THE GREATEST TIME OF THE YEAR HAS ARRIVED, PUMPKIN SEASON. I am fully stocked on pumpkin and pumpkin spice goodies. I am about to turn into a pumpkin. Every meal deserves some pumpkin goodness attached to it. That is why I decided to adapt my protein waffle recipe to add in pumpkin.

Earlier this week, I decided to go for a 6 am run. I ended up messing up my knee while running downhill. Lesson learned, running downhill in concrete is high impact, and quite painful. To soothe my pain I decided to experiment in the kitchen post run. It turned out marvelously. I could not take a picture then because first it was dark outside, and second, I was ravenous post run.

I decided to start my sunday with these pumpkin waffles while watching Chelsea beat Arsenal. It was a total win win situation.

Pumpkin Protein Waffles


Ingredients
1 egg
1 egg white
1 tsp baking soda
1 1/2 tsp pumpkin spice
1/4 cup pumpkin puree 
1 packet stevia
1 scoop of vanilla protein powder, I use Six Star Pro Nutrition Elite Series 100% Whey Isolate 
3 tbsp water

Directions
  1. Heat up the waffle iron.
  2. In a bowl, beat the egg and egg white.
  3. Add in the soda, spice, and stevia and mix well.
  4. Add in the pumpkin and mix.
  5. Add in the protein powder and mix, it will become quite thick.
  6. Add in the water 1 tbsp at a time.
    • Depending on what kind of protein powder you use, the amount of water may differ. Mine is instantized so not much water is needed. 
  7. Add half of the batter to the waffle iron, make one waffle.
  8. Add the other half, make waffle number two.
