Cucumber and Tomato Salad

If you look through the past couple of posts, you will see they are mainly dessert recipes. Upon realizing this trend, I decided to switch it up and post a salad recipe. One can not only live off of cookies and sweets. I wish you could, but you know, diabetes is not my cup of tea.

This is a super easy salad to make. It pairs nicely with chicken and pork chops. I normally pair it with some of my homemade tzatziki sauce, maybe I'll post that later, and it makes for a delicious side for dinner. I would also recommend adding goat cheese or feta as a topping or mix in. I have four tubs of those cheeses currently and I will be adding one or the other to my dinner tonight.

For mixing of all the ingredients, I use tupperware because you can put the lid on, and simply shake the container. It is a lot more thorough than using a bowl and mixing spoons. I did that once, my countertop was littered with chunks of vegetables and droplets of vinegar.

Cucumber and Tomato Salad


Ingredients
1 large cucumber, diced
2 roma tomatoes, diced 
1/2 red onion, diced
2 tsp oregano
1/4 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 1/2 tbsp red wine vinegar

Directions
  1. Throw everything into a large bowl, or tupperware as stated above.
  2. Mix or shake thoroughly.
  3. Eat.
