Maple Apple Oatmeal Cookies

It has been forever since I have posted. Life is getting crazy again with the start of school. I finally finished my medical school applications but I just took on a second job. It's almost like I hate having free time.

I made these cookies with a friend right before classes started because they were easy and we had a lot of free time.

They turned out magnificent. So sweet and chewy. At one point I slept walked into the kitchen and ate a few. How did I find this out? I found an array of cookie crumbs on my counter top. Even my sleeping self loved these cookies.

Maple Apple Oatmeal Cookies



Ingredients
1 1/2 cups all purpose flour
1 1/2 cups rolled oats
1/2 tsp baking soda
1/2 tsp baking powder
pinch salt
3/4 cup granulated sugar
3/4 cup packed brown sugar
6 tablespoons of butter, softened (I used blue bonnet instead of butter)
2 tsp vanilla extract
1 large egg
1 small apple, peeled and nicely chopped
1/8 cup sugar free maple syrup

Directions

  1. Preheat the oven to 350 and prepare two large baking sheets
  2. Mix together the flour, oats, soda, powder, and salt into a large bowl.
  3. Beat together the sugars and butter until fluffy.
  4. Beat in the egg, vanilla, and syrup into the above mixture.
  5. Gradually add the dry ingredients into the wet ingredients.
  6. Fold in the chopped apple pieces.
  7. Drop tbsp sized dough pieces, and flatten slightly, onto the sheets and space them about 2 inches apart.
  8. Bake for 9-12 minutes.
  9. Remove, cool, and nom.
