Blueberry muffins

I think my family raided a blueberry farm. I opened the fridge and there were boxes of blueberries begging to be eaten. I do love my fair share of this wonderful berry, but even I can not eat that many blueberries. Instead of watching these beauties wither away, I saw it fit to bake them into muffins.

I am about to move into a new apartment and I am currently a little stressed so baking was in order. I decided to make muffins because they are easy to make and delicious. Each one of these muffins is bursting with blueberry goodness.

Blueberry Muffins


Ingredients
1 1/2 cups all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
3/4 cup granulated sugar
1/3 cup unsweetened applesauce
1/3 cup skim milk
1 egg
1 tsp vanilla extract
2 cups blueberries

Directions
  1. Prepare 14 muffin cups and preheat the oven to 400.
  2. In a large bowl mix the flour, baking powder, and cinnamon
  3. In another large bowl, mix the sugar, applesauce, milk, egg, and extract.
  4. Add in the dry ingredients into the wet ingredients and mix until well incorporated.
  5. Fold in the blueberries.
  6. Fill each cup about 2/3 full.
  7. Bake for 15-18 minutes.
