I am about to move into a new apartment and I am currently a little stressed so baking was in order. I decided to make muffins because they are easy to make and delicious. Each one of these muffins is bursting with blueberry goodness.
Blueberry Muffins
Ingredients
1 1/2 cups all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
3/4 cup granulated sugar
1/3 cup unsweetened applesauce
1/3 cup skim milk
1 egg
1 tsp vanilla extract
2 cups blueberries
Directions
- Prepare 14 muffin cups and preheat the oven to 400.
- In a large bowl mix the flour, baking powder, and cinnamon
- In another large bowl, mix the sugar, applesauce, milk, egg, and extract.
- Add in the dry ingredients into the wet ingredients and mix until well incorporated.
- Fold in the blueberries.
- Fill each cup about 2/3 full.
- Bake for 15-18 minutes.
