Birthday Cake Oreo Cheesecake Cupcakes

Hello all and happy summer and world cup. I have returned from Brazil in time to celebrate my roommate's and friend of almost a decade's 21st birthday.

Bless the person who invented the birthday oreo. I made these before with normal oreos but the birthday oreos were more festive and delicious. The added sprinkles were a nice touch.

Each cupcake has an entire oreo on the bottom. These were made for a birthday so I held nothing back because birthday calories do not count.

Birthday Cake Oreo Cheesecake Cupcakes



Ingredients
28 Birthday Cake Oreos
4 packages of 8 oz. Cream Cheese, room temperature
4 eggs
1 cup sugar
1 tsp vanilla
1 cup of plain nonfat Greek yogurt

Directions
  1. Preheat oven to 350 and place one cookie into the bottom of each cupcake wrapper.
    • I advise using tin wrappers. Also this recipe makes 24 cupcakes.
  2. Coarsely chop the remaining cookies.
  3. Mix the cream cheese and sugar together very well until smooth.
  4. Add in the yogurt and vanilla and mix well.
  5. Add in one egg at a time, mixing well between each egg.
  6. Mix in the chopped cookies.
  7. Pour the mixture into the wrappers, filling all the way to the top.
  8. Bake for 20-22 minutes.
  9. Remove and refrigerate for at least 3 hours before serving.

    1. Theyre super delicious! I also prefer cheesecake over normal cake, so I may be a bit biased.
