White Bean Tuna Patties

I am currently moving out of my apartment of two years. Sad right?

Well since I want to make the moving process easier, I have been trying to consume as much as my food as possible before the move out day. I happened across a can of white beans and a can of tuna and got to thinking. I thought, why not mix the two together and see what happens.

It was interesting and delicious. Even though I ended up crumbling the patties over a bed of spinach and feta, they can double as a pescatarian burger. 

White Bean Tuna Patties


Ingredients
1 16 oz. can great northern beans, drained and rinsed
1 12 oz. can light tuna in water, drained well
1/4 cup chopped green onions
2 egg whites
2 tsp black pepper
1 tbsp balsamic vinegar
1 tsp cumin, optional

Directions
  1. Prepare a baking sheet and preheat oven to 400.
  2. Place 2/3 of the beans and the tuna, egg whites, spices, and vinegar into a food processor and blend very well.
  3. Add the mixture to a medium bowl and add in the remaining beans and green onions and mix.
  4. Form into four patties.
  5. Bake on each side for 10 minutes.
