Honey Citrus Cookies

It's summertime. While everyone I know is off exploring the world, partaking in internships, or just enjoying the freedom, I am studying. For what you may ask? The MCAT. I really kind of want to get into medical school.

However there is only so much information one girl can handle. So the best way to stress release is through baking. Oh and bake I did. I invited two friends over and made four dozen of these cookies. After their visit, the only thing left was the tray and the dishes. These cookies were devoured.

Prepare yourself.

Honey Citrus Cookies


Ingredients
1 3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp cream of tartar
pinch of salt
1 cup granulated sugar
4 tbsp. I cant believe it's not butter, I used the Kroger brand, softened
1 egg
1 tbsp honey
2-3 tbsp lemon zest, I zested a whole lemon
1-2 tbsp orange zest, I zested a whole orange

Directions
  1. In a large bowl, whisk together the flour, soda, tartar and salt.
  2. In a mixing bowl, beat the sugar and butter until nice and fluffy.
  3. Add in the egg, honey and zest and beat until nicely incorporated.
  4. Slowly mix in the dry ingredients until smooth.
  5. Refrigerate for at least 30 minutes to an hour.
  6. Prepare two large baking sheets and preheat oven to 375.
  7. Roll the dough into teaspoon amounts and place 2 inches apart.
  8. Bake for 8-9 minutes.
  9. Remove from oven and allow to cool.
