Sharlotka: Russian Apple Cake

Let's take a trip to the motherland. This cake is one of my favorite desserts to make simply because it is so easy to prepare but also it is so darn delicious. I have whipped this up for multiple pot lucks things, events, and as a gift.

I am an apple fiend, so of course the idea of an apple cake is appealing. I guess you can call this the Russian equivalent of apple pie. It is delicious with some tea or coffee.

Ingredients
4 apples, peeled and diced
1 cup flour
1 cup sugar
3 eggs, room temperature

Directions
  1. Prepare a cake tin and preheat the oven to 350.
  2. Place the diced apple pieces into the cake tin.
  3. In a bowl, mix the eggs until slightly foamy.
  4. Incrementally add in the sugar until fully dissolved.
  5. Mix in the flour until smooth.
  6. Pour the batter mixture over the apples evenly.
  7. DO NOT MIX THE APPLES INTO THE BATTER. If needed jiggle the tin a bit to allow the batter to flow in between the apple pieces.
  8. Place in the oven and bake for 45-50 minutes.
