Swiss Chard and Spinach Frittata

Frittata. Such a fun word to say. It is also a surprisingly interesting way to customize the everyday egg. Well the everyday egg beater and egg white. Yes, I used egg beaters. First off, we have a surplus at my house for some strange reason even though I eat egg whites while the minions and parents eat normal eggs. So I had to use up this mystery food before it would have to be thrown away. Wasting food is always a no no.

Anyways, this was supposed to be posted earlier but there was some internet issues that were not resolved until mummy dearest saved the day the next morning. Thankfully a kind soul invented smart phones because I could still peruse the interwebs to my millenial content.

Side note: Originally supposed to be only swiss chard but grandmama decided to pilfer some of my swiss chard, so spinach was used as a partial substitute.

Swiss Chard and Spinach Frittata

I love it when a dish has a multitude of colors to it


Ingredients
4 eggs or 1 cup of egg beaters
4 egg whites
1/4 cup shredded mozzarella cheese (I used Kroger's fat free)
1/2 bunch swiss chard (3 cups when cut up)
1/2 bunch spinach (3 cups when cut up)
1 medium onion, thinly sliced
2 tbsp light butter (yup, I used butter y'all)
salt and pepper

Directions
  1. Preheat the oven to 400
  2. In a medium bowl whisk the first  three ingredients and some salt and pepper if desired.
  3. Separate the leaves from the stems of the swiss chard.
  4. Dice the stem into small pieces.
  5. Cut the spinach and swiss chard leaves into nice ribbons
  6. In a skillet melt 1 tbsp of the butter and add the onions.
  7. Cook over low for about 8-10 minutes until translucent, salt and pepper to taste.
  8. Turn the heat up to medium-high and caramelize the onions, 2-3 minutes.
  9. Put onions aside and in a larger skillet melt the other tbsp butter and add the stem pieces and cook over medium for 3-4 minutes.
  10. Add in the leaves and cook until wilted.
  11. Add in the egg mixture along with the onions to the larger skillet and mix well to incorporate everything together.
  12. Over a low heat allow the mixture to cook for 7-8 minutes so the sides and bottom are set.
  13. Place the skillet into the oven for 5-7 minutes.
  14. Remove from oven and flip over onto a large plate.
  15. Serve and be glad.
