Asparagus Chicken Stir Fry

Since I've been slacking in my posting, I thought I should pump out another post in less than a week.

This meal is great for a dinner for two, and that's exactly why I made it. I had it without any rice and ate it as is, but the other person had it over rice. It turned out marvelous both ways.

The hardest part of this was finding fresh ginger at my grocery store. I was walking around the produce section searching high and low, but to no avail. I had to get it from somewhere else. So if you can easily find fresh ginger, then this recipe will be a breeze.

Asparagus Chicken Stir Fry


Ingredients
14 oz. raw chicken breast, diced into 1 inch cubes
1 small white onion, chopped
2 1/2 cups of chopped asparagus, one bunch 
1/2 cup low sodium chicken broth
2 tbsp low sodium soy sauce
3 garlic cloves, chopped
1 tbsp fresh ginger, grated
2 tsp cornstarch mixed with 2 tbsp water

Directions
  1. Spray a large frying pan, and add the asparagus and onion over medium high heat and cook until the onion softens.
  2. Add in the garlic and ginger, and cook until lightly browned and remove and set aside.
  3. Spray the pan again and brown the chicken, about 4-5 minutes until cooked through. Set aside.
  4. In the same pan, add the soy sauce and broth and bring to a boil.
  5. Add in the cornstarch and water mixture and continue to boil for 1-3 minutes.
  6. Add in the veggies and meat and mix until everything is covered with the sauce.
  7. Remove from heat.
  8. Enjoy
