One of the products of the strawberry baking bonanza was these cookies. I absolutely love oatmeal raisin cookies. Since I had enough strawberries to sink a naval ship, I thought why not sub in strawberries instead. Glorious decision really.
These cookies are soft and sweet and delicious. I have them with my afternoon tea. Honestly, what better way to celebrate the warm weather than with some strawberry filled goodness?
Strawberry Oatmeal Cookies
Ingredients
1/2 cup all purpose flour
1/4 cup whole wheat flour
1/2 tsp baking soda
1 cup rolled oats
pinch of salt
1/4 + 2 tbsp Splenda Brown Sugar Blend, or 3/4 cup brown sugar
2 tbsp I Can't Believe It's not Butter, or real butter, softened
2 tbsp unsweetened applesauce
1 tsp vanilla extract
1 egg
1 cup chopped strawberries
Directions
- Preheat the oven to 350 and prepare a large cookie sheet.
 - In a large bowl, mix together the flours, oats, salt and baking soda.
 - In another bowl, beat the butter and sugar until smooth. Add in the applesauce, vanilla and egg and beat until all combined.
 - Add in the dry ingredients and mix well.
 - Gently fold in the strawberries, try not to crush the berries.
 - Drop tbsp sized amounts of dough onto the sheet, slightly flatten the cookies.
 - Bake for 10-12 minutes, the tops should be golden brown.
 - Allow to cool before removing from the sheet or else they will fall apart.
