You may ask, what does that mean? It means, quite simply, these are cookies with pieces of bacon on the inside. Next you might ask, why? Because why not.
Honestly, salty and sweet are a marvelous combination. I love cookies. I love bacon. It was time for these two lovebirds to meet and create offspring. Oh how they did meet and create wonderful progeny. These cookies taste like breakfast, but in a dessert form. They are a combination of the two greatest meals, breakfast and dessert. How can anyone complain?
This is definitely not the usual fare you see on here, but sometimes you have to live a little. Plus it was for Easter, and on holidays, there is no holding back.
Maple Bacon Cookies

1 cup unsalted butter, room temp
12 slices of bacon, diced (before cooking)
1/4 cup maple syrup
3/4 cup granulated sugar
1 egg
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
Directions
- Preheat the oven to 350 and prepare a baking sheet.
 - In a frying pan, cook the bacon until crispy.
 - Drain very well, add in the syrup and cook until the syrup is thickened.
 - Remove from heat, add to a plate or bowl, and allow to cool.
 - In a large bowl, with a mixer, beat the butter and sugar together until nice and fluffy.
 - Add in the egg and vanilla, and mix until fully incorporated.
 - Mix together the flour and baking soda.
 - Add the flour mixture to the egg, sugar, and butter mixture and mix well until a dough forms.
 - Fold in the bacon pieces.
 - Drop spoonful amounts of batter onto the baking sheets.
 - Bake for 10-14 minutes, or until the tops are a nice golden brown.
 - If you make smaller ones then only bake for 8-10 minutes. I made mine quite large so they needed a longer baking time.
 - Remove and allow to cool.
 - I tried to pack them into a tray before allowing them to fully cool and they ended up sticking together and falling apart. So unless you're into that, be patient.
