Pumpkin Spice Chocolate Chip Balls

Four tests, one week. Honestly, my brain can no longer function properly. I think the only thing I know now is my name. Oh and how to bake.

PUMPKIN SPICE PUMPKIN SPICE PUMPKIN SPICE. TIS THE SEASON OF PUMPKINS!

I am excited. Pumpkin shall be eaten every day. EVERY DAY. Through November. I LOVE PUMPKIN EVERYTHING.

Anyway. So these were supposed to be cookies. But they are no longer cookies. Whatever, it was a happy delicious accident. It's pumpkin spice, you honestly cannot go wrong

Side note: I did use sugar substitute blends.

Pumpkin Spice Chocolate Chip Balls


Ingredients
1 egg white
1/4 cup splenda brown sugar mix, or 1/2 cup brown sugar
1/4 cup Truvia baking blend, or 1/2 cup sugar
1 tsp vanilla
2 tbsp pumpkin puree
1 cup all-purpose flour
1/4 tsp baking soda
1 tbsp pumpkin spice
pinch salt
1/2 cup chocolate chips

Directions
  1. Preheat oven to 350 and prepare a large baking sheet.
  2. In a large bowl, whisk together the egg white, sugars, vanilla and pumpkin until nice and smooth.
  3. In a separate bowl mix together the flour, soda, spice and salt.
  4. Add the dry ingredients into the wet and mix until incorporated.
  5. Fold in the chocolate chips.
  6. Drop tablespoonfuls of the dough onto the sheet.
  7. Bake for 10 minutes.
