Here you go. This recipe makes cornbread muffins, nine to be precise. They're delightfully sweet and delicious. They go great with any chili recipe and are a sure crowd pleaser.
I also used a Truvia Baking Blend here instead of sugar because calories y'all. I'll put in the sugar equivalent as well in the ingredients list.
Applesauce Cornbread
Ingredients
1 cup all-purpose flour
1 cup yellow cornmeal
2 tbsp. baking blend truvia, or 1/4 cup sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp salt
2 large eggs
3/4 cup 2% milk, or any dairy milk
1/4 cup unsweetened applesauce
Directions
- Preheat oven to 425 and prepare 9 muffin cups.
- In a medium bowl, whisk together the eggs, milk and applesauce.
- In another bowl, mix together the flour, cornmeal, sugar/stevia, baking soda and powder, and salt.
- In a large bowl, mix the dry ingredients with the wet ones, and mix until incorporated fully.
- Fill each cup 2/3 full and bake for 18-20 minutes.
- The tops should be a little golden
- Allow to cool.
- Devour.
