Applesauce Cornbread

So, I have given you two chili recipes. What goes better with chili than cornbread. But if you are preparing a healthy chili, you don't want to go all crazy with cornbread that will negate the good nutrition of a skinny chili. I also promised you a cornbread recipe with the first chili recipe.

Here you go. This recipe makes cornbread muffins, nine to be precise. They're delightfully sweet and delicious. They go great with any chili recipe and are a sure crowd pleaser.

I also used a Truvia Baking Blend here instead of sugar because calories y'all. I'll put in the sugar equivalent as well in the ingredients list.

Applesauce Cornbread


Ingredients
1 cup all-purpose flour
1 cup yellow cornmeal
2 tbsp. baking blend truvia, or 1/4 cup sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp salt
2 large eggs
3/4 cup 2% milk, or any dairy milk
1/4 cup unsweetened applesauce

Directions
  1. Preheat oven to 425 and prepare 9 muffin cups.
  2. In a medium bowl, whisk together the eggs, milk and applesauce.
  3. In another bowl, mix together the flour, cornmeal, sugar/stevia, baking soda and powder, and salt.
  4. In a large bowl, mix the dry ingredients with the wet ones, and mix until incorporated fully.
  5. Fill each cup 2/3 full and bake for 18-20 minutes.
    • The tops should be a little golden
  6. Allow to cool.
  7. Devour.
