Chicken Cacciatore with Spinach (Crockpot Recipe)

Honestly I thought I would have more free time this semester since due to my back injury because I can no longer row. I was wrong. This sunday I found myself cramming in three chapters of microbiology along with the assignments on top of my other readings. College is crazy and my dream to be a doctor is quite possibly the most inconvenient choice I have ever made.

Thank the heavens for the crockpot. All I had to do was brown chicken and sauté vegetables and then throw them in the crockpot and turn that sucker on. My crockpot is fancy schmancy and has an automatic timer for the high and low settings. It was an apartment warming gift from a family friend.

Anyways, I advise on investing in this wonderful machinery because you can find yourself having a wonderful meal without all that cooking. It also frees up time to read about peptidoglycan and contemplate your life choices.

P.P.S This recipe cost me about $6-7 because chicken thighs are cheap and so are vegetables. Also Italian seasoning is one of the cheapest spices in the market. Sales at the store also pretty much dictate what I am going to eat.

Chicken Cacciatore with Spinach


Ingredients
6 skinless and boneless chicken thighs, about 2 lbs
1 onion, sliced
1 bell pepper, sliced. I chose red.
2 bay leaves
1 tbsp. italian seasoning
28 oz. crushed tomatoes
2 cups spinach leaves, or about two handfuls
optional: salt and pepper to your heart's desire

Directions

  1. If you so desire, brown the chicken in a pan on medium heat. About 1-2 minutes a side and then throw in the crockpot. Sauté the vegetables until just soft and then throw in crockpot.
    • This step is totally optional, you could also just throw those babies in and have at it.
  2. Pour in the sauce and spices and leaves. 
  3. Stir it all together.
  4. Set on high for 4 hours or low for 8 hours.
    • I prefer high because the chicken is still intact but so soft that it can be cut with a spoon.
