I started with 1 1/2 lbs of ground turkey, but my cat, Shakira, of course wanted some. So the actual amount of turkey used was 1 1/2 lbs turkey minus a cat sized offering.
Turkey Spinach and Bean Soup
Ingredients
1 1/2 lbs 99% lean ground turkey
1 15 oz. can of Great Northern Beans, rinsed and drained
1 onion, chopped
4 garlic cloves, minced
10-12 oz fresh spinach, chopped
1/2 tsp dried rosemary
1/2 tsp dried thyme
4 cups low sodium chicken broth
1 cup water
salt and pepper to taste
Directions
- In a large pot, cook the turkey until all white, 4-5 minutes.
- Add in the onion and garlic and cook for another 4-5 minutes.
- Add in the spices, beans and broth and bring to a boil.
- Allow to simmer with a lid for 5-6 minutes.
- Add in the chopped spinach and simmer for another 5-8 minutes.
