Turkey Spinach and Bean Soup

This recipe arose out of the leftovers from the chili. I had an extra can of beans, more turkey and also so much spinach that even Popeye couldn't eat it all. Also this family really enjoys soups. The best part about soups? The enormous amount of croutons that I put on top. I love carbs.

I started with 1 1/2 lbs of ground turkey, but my cat, Shakira, of course wanted some. So the actual amount of turkey used was 1 1/2 lbs turkey minus a cat sized offering.


Turkey Spinach and Bean Soup


Ingredients
1 1/2 lbs 99% lean ground turkey 
1 15 oz. can of Great Northern Beans, rinsed and drained
1 onion, chopped
4 garlic cloves, minced
10-12 oz fresh spinach, chopped
1/2 tsp dried rosemary
1/2 tsp dried thyme
4 cups low sodium chicken broth
1 cup water
salt and pepper to taste

Directions
  1. In a large pot, cook the turkey until all white, 4-5 minutes.
  2. Add in the onion and garlic and cook for another 4-5 minutes.
  3. Add in the spices, beans and broth and bring to a boil.
  4. Allow to simmer with a lid for 5-6 minutes.
  5. Add in the chopped spinach and simmer for another 5-8 minutes.
