Honey Mustard Grilled Chicken

Fun Erena Fact: for my 13th birthday, I requested a charcoal grill. This gift began my long love affair with cooking over an open flame. The smell of the smoking chips and of the charcoal lumps that linger afterwards on me is quite possibly my favorite aroma.
It is amusing when people come over and assume that my grill is actually the property of my step-dad. People never assume that I, a female, am a grill aficionado.
And on a final note, I do not use instant light or lighter fluid to prepare the charcoal, instead I use my nifty chimney starter and some crumpled paper. It may not be as easy but it allows for the smoke to properly flavor the food instead of those nasty chemicals.

I decided to make some honey mustard chicken as my first grill meal of the summer. The marinade is quite simple and the chicken need only be marinated for 30-45 minutes for those in a hurry. Also chicken is one of the easiest things to grill so I chose it to be my baby step reentry into the exciting world of charcoal grilling.

Honey Mustard Grilled Chicken


Ingredients
5-6 chicken breasts
1/2 cup honey
1/2 cup dijon mustard
1 tsp red pepper flakes
1/4 tsp cayenne pepper
1 garlic clove, minced

Directions
  1. Mix the last five ingredients together in a bowl.
  2. In a large container place the chicken and then pour the marinade over the chicken. 
  3. Mix the marinade with the chicken to make sure everything is coated.
  4. Allow to marinate for 30-45 minutes.
  5. On a readied grill, cook each side for 4-5 minutes or until firm to the touch and the juices run clear.
