It's Sunday, the day of rest and delicious breakfast. This morning, I prepared a wonderful batch of pancakes that did not last long on my plate. I love pancakes because you can usually throw whatever you want in them and they still taste awesome.
For this batch I chose a green apple and cinnamon but I will probably try these again with some other interesting combos. Maybe PB2 and blueberries another day?
For some reason I have a minor fear of actually cooking the pancakes. I either flip them too early or too late and end up with a burned side and a mushy center. I guess this morning the breakfast deities smiled upon me because neither of those happened. I guess patience does sometimes pay off, just not when you're driving down I-85 in Atlanta traffic. That's another story.
Greek Yogurt Oatmeal Pancakes

Look at that sneaky apple trying to get in the limelight.
Ingredients
1/2 cup rolled oats
1/2 cup plain greek yogurt
3 egg whites
1/2 tsp baking powder
1/2 tsp vanilla extract
optional: sweeteners and any preferred mix ins (apple, banana, berries, cinnamon, etc.)
Directions
- In a food processor, process the oats until a flour consistency is reached.
- In a medium bowl add all the ingredients and the newly made oat flour together and whisk until smooth.
- Add in any additional options if you wish. I added a green apple, cinnamon, vanilla and sweetener.
- Dole out 1/4 cup of batter into a prepared pan and proceed to make pancakes.
