Pineapple Chicken

Chicken is a recurring theme here on The Hungry Lightweight. It's easy to just throw a couple of flavors together, dump it on some chicken and then cook the meat in some manner. So last night I found some crushed pineapple in the pantry and I started to think. I like pineapple and I like chicken, this could work.

I had some frozen chicken breast tenderloins that were from the large package that also supplied the needed chicken for the garlic brown sugar recipe. I defrosted the extra chicken and marinated them with pineapple, brown sugar, and garlic. The chicken came out beautifully. It was not dry in the slightest and the sweetness from the pineapple and sugar were amazing despite them only marinating for under an hour.

Pineapple Chicken


Ingredients
7 Chicken breast tenderloins, or whatever style of chicken you prefer.
1/2 cup crushed pineapple
2 tbsp brown sugar
1 garlic clove or 1/4 tsp garlic salt

Directions
  1. In a bowl mix the non-chicken ingredients.
  2. Add in the chicken and coat each piece.
  3. Allow to marinate while the oven preheats to 450.
  4. Bake for 12 minutes.
  5. Remove, let cool and enjoy.
