Honey Apple Pork Loin

This recipe is quite possibly one of the easiest things I have ever made. The only difficulty was resisting opening the lid of my slow cooker to marvel at the amazing spectacle occurring within the vessel. My house smelled heavenly and my palate relished in the flavor.

I made this for a dinner, and my company seemed to enjoy it because they even took some home since I underestimated how much 2 lbs of pork loin makes. I paired this with some roasted okra the first night, and then sweet potato and other veggies when I dug into the left overs.

Well I will stop describing this dish and just tell you how I made it.

Honey Apple Pork Loin


Ingredients
2 lb pork loin
1 granny smith apple, cored and thinly sliced
2 tbsp honey, approx.
1-2 tsp cinnamon

Directions
  1. If using an oven preheat to 350 and prepare a large cooking sheet. If using a slow cooker, pull it out and place it on the counter.
  2. Thinly slice the apples, I left the skins on and it was fine.
  3. Make nice deep cuts into the pork, separated by an inch or two.
  4. Place apple slices into the cuts. 
  5. Layer the bottom of the slow cooker or pan with apple slices and drizzle a bit of honey over the slices.
  6. Place the pork with the apples inserted over the apple slices. 
  7. Drizzle with the remaining honey and cinnamon.
  8. Bake in the oven for about an hour, or in the slow cooker on high for four hours or low for eight hours.
