Spinach Dip with Greek Yogurt

So to everyone's surprise, this year's Super Bowl was my first. I have never watched the game and I usually just watched the commercials the next day. Also, it seems that during my entire academic career, some teacher has decided to place a test on the monday after the Super Bowl.

This year was different though. I had no academic obligations and I decided that it was high time to enlighten myself about all of the hullabaloo surrounding the big game. Also I love any excuse to cook and eat.

Since it is me, I can't make a dip that would cause your arteries to scream. Instead I took an old favorite and lightened it up. I also made my own pita chips to go with it.

I like to think that the speed at which this was consumed to be a promising sign. I'll let you be the judge though.

Spinach Dip with Greek Yogurt


Ingredients
4 cups chopped fresh spinach
1 1/2 cups plain nonfat Greek yogurt
1/4 cup chopped green onions
3 cloves of garlic, minced
1 cup low moisture part skim shredded Mozzarella
1/4 tsp salt
1/2 tsp black pepper
1/4 cup shredded parmesan

Directions
  1. Preheat oven to 350.
  2. In a large bowl, mix everything except for the parmesan.
  3. In a small square baking dish, evenly spread the mixture.
  4. Bake for 30-35 minutes, or until it begins to bubble slightly.
  5. Upon removal from the oven, sprinkle the parmesan on top.
  6. Serve hot with chips of choice.
