Skinny Sugar Cookies

Day two of being frozen in my apartment, and I am already feeling the Cabin Fever sink in. I tried to go to the apartment complex gym, but it was closed. The road has a sheet of solid ice on top of it and my car is a Corolla, so that is a no go. I could trek 1-2 miles to my friend's apartment or I could make cookies in the warmth of my kitchen.

Cookies was the final decision. My roommates also agree that I made the right choice because they are on the receiving end of free cookies. Also my friend from Atlanta came up before the ice storm truly hit, so we have an extra person cohabiting with us.

These bad boys have butter (well vegetable oil spread), real sugar, and goodness in them. They're wonderfully soft and delicious.

Skinny Sugar Cookies





Ingredients
1 1/4 cup of all-purpose unbleached flour
3/4 tsp cornstarch
1/4 tsp baking powder
2 tbsp blue bonnet (or butter but blue bonnet has less calories), melted and cooled
1 egg, at room temperature
1 tsp vanilla extract
1/2 tsp butter extract
1/2 cup + 2 tbsp of granulated sugar

Directions

  1. In a medium bowl, mix the flour, cornstarch and baking powder together.
  2. In another medium bowl, whisk the egg, butter and extracts until fully incorporated.
  3. Whisk in the sugar to the egg and butter mixture.
  4. Slowly mix in the dry ingredients into the wet ingredients until a dough is formed.
  5. Roll the dough into a ball and place in a bowl, covered, in the fridge for at least 1 hour.
  6. Preheat the oven to 350 and prepare a large cookie sheet.
  7. Take tablespoon amounts and roll them into small balls.
  8. Flatten the balls a bit.
  9. Bake for 11-12 minutes.
  10. Allow to cool once removed from the oven.
