Pumpkin Protein Pancakes

October is over but fall is still here. So pumpkin is still going strong in my book.
Since the weather is getting a little cold, what better way to wake up than with some hot delicious pancakes?

Why eat a pancake filled with empty carbs and then you're hungry in two hours despite eating a stack a foot high? Or is that just me?

Fuel your day with these protein packed delicious pumpkin pancakes. They are wonderfully matched with syrup and a nice cup of pumpkin spice coffee.

Also I use Six Star Pro Nutrition Elite Series 100% Whey Isolate. It's actually really good and not grainy.

Pumpkin Protein Pancakes

 

Ingredients
1 scoop vanilla protein powder
1 egg
1 egg white
1/4 cup pumpkin puree
1 tsp pumpkin spice
1 packet of stevia or tsp of sweetener of choice
1 tsp baking powder

Directions
  1. In a medium bowl add all ingredients and whisk until smooth.
  2. Over medium-low heat, pour out about 1/4 cup of batter.
    • You may want to smooth it out since it is a little thick.
  3. Cook for about 2 minutes on each side.
  4. Cover in syrup and have at it.
