Pumpkin Bread Cookies

It's fall weather in the south finally and that just means pumpkin is even more appropriate. Also, Trader Joe's is a pumpkin mecca currently. I picked up some pumpkin rooibos tea and some pumpkin spice coffee, both were excellent decisions. And me being me, I need something to dunk into a hot drink, so I made an old favorite, pumpkin bread cookies.

These things say they're cookies but they're actually more like baby breads. They have an identity issue, but as a person known by multiple names, I can relate.

These puppies are easy to makes and are done pretty quickly. So make some type of pumpkin beverage and get to baking.

Pumpkin Bread Cookies


Ingredients
2 cups flour
1 cup sugar
1/2 cup applesauce
1 cup pumpkin puree
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1 tsp pumpkin spice
1 tsp cinnamon
pinch of salt

Directions
  1. Preheat oven to 350 and prepare a baking sheet or two.
  2. Mix together the sugar, applesauce and vanilla until smooth.
  3. Add the pumpkin to the sugar and applesauce mixture and mix well.
  4. In a separate bowl, mix together the flour, baking soda and powder, the spices and salt.
  5. Add the dry ingredients and mix all together until fully incorporated.
  6. Drop tablespoonfuls of the batter onto the baking sheet.
  7. Bake for 18-20 minutes.
