Feta and Spinach Turkey Meatballs


So I have three tests in the next seven days, so of course I am going to procrastinate by grocery shopping and cooking.

Bless grocery sales. When something is on sale at the store, I automatically start thinking of things I can make. Kroger this weekend had a wonderful sale. I found ground turkey, with included coupon, and feta on sale. I have been wanting to combine these two things for awhile and now was the opportune moment. While the feta I bought was the tomato basil variety, I am sure that any other type would be good. I simply got this one because it was the particular one on sale.

These meatballs have no bread crumbs or oatmeal or whatever else people throw in meatballs. First, I do not have bread to put in them and second, I was not bothered to get some. If you are that particular, through some extra carbs in there.

Feta and Spinach Turkey Meatballs


Ingredients
1 lb 99% lean ground turkey
1 egg
3 cups spinach or 3 handfuls, chopped
1/2 tsp garlic powder or two cloves minced
1/2 tsp black pepper
1/2 cup Fat Free Feta Cheese, I used President's Choice with Tomato and Basil

Directions
  1. Preheat oven to 350 and prepare a large baking sheet.
  2. In a medium-large bowl, combine all ingredients and hand mix together.
    • Don't be afraid to get your hands dirty.
  3. Form meatballs and place on sheet.
    • I made 14 large meatballs
  4. Bake for 25-28 minutes, the tops should be a little golden.

  2. You can freeze them. They should 4-5 days in the fridge.

    1. I dont know for sure because Ive never tried. You can always see if there are similar recipes that cook meatballs in the slow cooker.

  4. Could I put these on top of a spaghetti squash pasta, if so any sauce that you would suggest? Pesto? tomato? any ideas? thank you :) :)

  5. These would go well with spaghetti squash! I would say tomato based sauce would be best but that's just because I like it more than pesto. You can always try both, separately of course, and see which one is better!
