Chocolate Protein Pancakes

Hey y'all. I know it has been a good while since I have posted. I am sorry for your anguishing but I was in good 'ol South Carolina. I was too lazy to bring my nifty traveling box of baking and cooking supplies. Yes, I do have a traveling box of baking ingredients and spices. Is that weird?

Anywho, I am back in A-town because I have an appointment with the Spine Center about my grandma back and I also have jury duty tomorrow. Two very exciting things.

How can one possibly bring happiness to such sad events? CHOCOLATE. Seriously, chocolate makes almost everything good. It is one of the true treasures of the new world.

If you know me, then you know I have a protein set mind. I try to stuff my meals with this wonderful nutrient. Since I can't really partake in any physical activity, I need to cut back on carbs and whatever but you will never hear of me being on a low carb diet. I wanted pancakes, so I made these chocolate filled goodies this morning. After a small snag, everything worked out well.

The protein powder I used in this recipe is MLO Super High Protein. It is unflavored and when mixed into things makes the dish taste creamier.

Chocolate Protein Pancakes


Ingredients
1/4 cup rolled oats
1 scoop/1 serving of unflavored or chocolate protein powder
1 egg white
2 tbsp. plain greek yogurt
1/4 cup unsweetened plain almond milk
3 packets stevia
2 tbsp. unsweetened cocoa powder
1 tsp. baking powder

Directions
  1. In a blender, add the rolled oats and blend until a nice flour consistency is reached.
  2. Add in the rest of the ingredients and blend until smooth.
  3. Heat a oil-sprayed pan over medium heat and dispense 1/4 cup portions of batter.
  4. Cook until the edges turn opaque and then flip.
  5. Wait another 2-3 minutes, and you have yourself a chocolate protein pancake.
