PB2 Chia Oat Balls (No Bake)

Ch-ch-chia. We used to have a chia pet that looked like Shrek and now I find myself eating the seeds. Chia seeds are surprisingly versatile little buggers that make things all better. Also PB2 is one of those things I just dump into everything. So what better combination than to bring two of my food loves together.

It might take 5 minutes tops to make these little pieces of yum but if you want to enjoy the full effect, a 30-45 minute refrigeration will be needed. So during that seemingly long wait you could read a magazine, watch Arrested Development or stare at a clock. I went with the Arrested Development option.

Side note: Since Kroger likes to have moments of being out of stock, these were made with chocolate PB2. But hey, chocolate makes things better anyway.

PB2 Chia Oat Balls


Ingredients
2 tbsp PB2
1 tbsp water
1/4 cup oats
1 tsp honey
1/4 tsp vanilla extract
1/2 tsp cinnamon
1 tsp chia seeds

Directions
  1. Mix the PB2 and water together until smooth in a small bowl.
  2. Add the rest of the ingredients and mix until everything comes together.
  3. Roll out the mixture into small balls. I was able to make 12 small ones.
  4. Put the balls in the fridge and anxiously wait.

    1. PB2 is a peanut powder that is used to substitute for peanut butter. It has less calories and fat.
