Apple Coffee Cake Muffins

It has been a while since I have posted anything. Well my family went to Brazil and took the nice camera with them. So I have been only having to cook for one and I have not made any really exciting dishes, mainly just cereal, yogurt and eggs. I've been slacking ya'll and I am ashamed.

However today I decided to go see my grandmother and great grandmother since I have not visited in a while and I feel like a bad granddaughter. Whenever you go over to someone's residence in Russia or visit Russians, it is assumed you will have some tea and some baked good. Usually the host provides the spread, but whatever, I am making these muffins.


Apple Coffee Cake Muffins


Ingredients
1/2 cup unsweetened apple sauce
3/4 cup brown sugar
1 egg
1 cup all purpose flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 cup low fat vanilla yogurt
1 large granny smith apple, peeled and diced

Directions
  1. Preheat the oven to 350 and prepare a muffin tin for 9 muffins.
  2. Bring together and mix well the apple sauce and brown sugar.
  3. Add in the egg and beat well.
  4. In a separate bowl, combine the flour, baking soda and cinnamon and whisk together.
  5. Combine the dry ingredients into the wet, and mix well.
  6. Add in the yogurt and mix until incorporated.
  7. Fold in the apple pieces.
  8. Distribute the batter into the prepared muffin tin until each well is about 3/4 full.
  9. Bake for 28-30 minutes.
  10. Allow to cool.
  11. Remove from tin and allow to sit out for 10-20 minutes before serving.
