This little number I tried today is something I found on the interwebs one night during a bout of insomnia. I thought it sounded strange but I was like "I like strange" so here we are today.
Today being Mother's Day I decided I could experiment on mummy dearest and see how she likes these little devils. She is this whole fat content freak so I tried to lighten these up even further by removing the canola oil needed to fry these bad boys and just used the oil spray. This was a tad of a hassle because in between batches that nasty brown stuff remained in the skillet and I had to wipe that off but hey, anything for mommy.
I am curious what these would taste like if I added a little brown sugar. Maybe next time? Or if any of y'all try it, hit a sister up.
BANANA CORN FRITTERS
Ingredients:
3/4 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cayenne pepper
3 medium bananas, or about 1 1/4 cups. Mine were partially browned so the fritters came out sweeter.
1 large egg
2 tablespoons milk. I used skim.
2 tablespoons canola oil, divided or you can just use oil spray on a skillet for an oil-less option.
Directions:
- Mash the bananas but dont go overboard. Leave some nice chunks in there.
- Preheat the oven to 400 degrees Fahrenheit and prepare a baking sheet.
- In a medium bowl, add the first six ingredients together and whisk together.
- In a separate bowl, add the remaining ingredients and mix together well.
- Add the dry ingredients to the wet and mix but only until just incorporated. Its supposed to be clumpy.
- Heat the skillet with the oil on medium-high and dole out about a heaping tablespoon of the mixture on the pan. I just eyeballed it here.
- Brown each side for about 30 seconds or 2 minutes depending on the heat of the pan.
- Place each little fritter onto the sheet.
- Place the sheet into the oven for about 8-9 minutes and let them bake some more until they are firm to the touch.

81 calories, 23 calories from fat, 2.6g total fat, 13mg cholesterol, 170mg sodium, 13.4g carb, 1.2g fiber, 3.1g sugar, 1.7g protein
I'm sure that if you try the oil-less version the nutritional content will be slightly different.
